Red-skinned Potato Salad
This is a four ingredient recipe for Red Skinned Potato Salad. It is without a doubt, the most amazing potato salad that I have ever tasted. It is simply unbelievable that four ingredients can make something this awesome. Each time my family makes this, we fall in love all over again. It has been one of our favorites for years and years and years. If you like slightly spicy foods, potatoes, bacon, cheese and Ranch dressing ... you will ADORE this potato salad!
Ingredients
I am all but embarrassed to list these, they seem so few. Trust me however, the sum of the parts is greater than each of them individually.
You will need:
1 lb. bacon
12 oz. brick of Monterey Jack cheese with jalapeno peppers
1 16 oz. bottle of your favorite brand of Ranch dressing *
4 pounds of red skinned potatoes
* My favorite by far is Kraft Peppercorn Ranch dressing, but it can be hard to find. When I cannot find the Kraft Peppercorn Ranch, I add a heaping teaspoon of ground peppercorns (I grind them in a spice mill, or my coffee grinder) to the regular Kraft Ranch dressing
Instructions
Cook, drain and crumble the bacon.
Wash the potatoes and cut into chunks, then cook in boiling water until they are easily penetrated with a fork (about fifteen minutes). Drain.
Grate the cheese.
Put hot, drained potatoes into a large bowl, then cover with grated cheese, pour the entire contents of the bottle of Kraft Ranch dressing on top, and top with crumbled bacon.
Stir well.
Serve.
Oh, my goodness, try not to faint!
